Maple Banana Bread
Ingredients
- 2 cups all-purpose flour
- ½ tsp salt
- 1 tsp baking soda
- ½ tsp baking powder
- 1/2 tsp cinnamon
- 2 large eggs beaten
- 1/2 cup Spring Tree™ Maple Syrup
- 1/4 cup brown sugar
- 1 tsp vanilla
- ¼ cup plain or vanilla yogurt
- 6 tbsp unsalted butter melted and cooled slightly
- 1 1/2 cups overripe bananas mashed with fork - approximately 3 - 4 bananas
- 1/3 cup chopped walnuts
Instructions
- Preheat oven to 350º F.
- Prepare a 9"x5" loaf pan by spraying with nonstick cooking spray.
- In a small bowl, add flour, salt, baking soda, baking powder and cinnamon and whisk to combine. Set aside.
- In a large bowl, add the Spring Tree™ Maple Syrup, brown sugar and eggs and whisk for 1 minute until thoroughly combined.
- Add the yogurt, vanilla, melted butter and mashed bananas and whisk until combined.
- Add the dry ingredients into the wet ingredients and mix until no flour pockets remain. Do not over-mix.
- Fold in the chopped walnuts.
- Pour and spread the batter into the prepared baking pan.
- Bake for 60 minutes, until a toothpick inserted into the center of the bread comes out clean.
- Remove bread from the oven and allow it to cool in the pan for 10 minutes. Remove from the pan and set on a wire rack until completely cooled.
- Slice and serve with whipped maple butter* if desired.
