Maple Banana Bread

Ingredients
  

  • 2 cups all-purpose flour
  • ½ tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1/2 tsp cinnamon
  • 2 large eggs beaten
  • 1/2 cup Spring Tree™ Maple Syrup
  • 1/4 cup brown sugar
  • 1 tsp vanilla
  • ¼ cup plain or vanilla yogurt
  • 6 tbsp unsalted butter melted and cooled slightly
  • 1 1/2 cups overripe bananas mashed with fork - approximately 3 - 4 bananas
  • 1/3 cup chopped walnuts

Method
 

  1. Preheat oven to 350º F.
  2. Prepare a 9"x5" loaf pan by spraying with nonstick cooking spray.
  3. In a small bowl, add flour, salt, baking soda, baking powder and cinnamon and whisk to combine. Set aside.
  4. In a large bowl, add the Spring Tree™ Maple Syrup, brown sugar and eggs and whisk for 1 minute until thoroughly combined.
  5. Add the yogurt, vanilla, melted butter and mashed bananas and whisk until combined.
  6. Add the dry ingredients into the wet ingredients and mix until no flour pockets remain. Do not over-mix.
  7. Fold in the chopped walnuts.
  8. Pour and spread the batter into the prepared baking pan.
  9. Bake for 60 minutes, until a toothpick inserted into the center of the bread comes out clean.
  10. Remove bread from the oven and allow it to cool in the pan for 10 minutes. Remove from the pan and set on a wire rack until completely cooled.
  11. Slice and serve with whipped maple butter* if desired.

Notes

*To make whipped maple butter, add 1/4 cup softened unsalted butter and 6 tablespoons of Spring Tree Maple Syrup to a bowl and use your mixer to beat until light and fluffy.
