Richardson Farm’s Smashed Brussels Sprouts With Cheese

Serves: 6
  • Cabot Salted Butter to grease baking pan
  • 1 1/4 pounds Brussels sprouts
  • salt & pepper to taste
  • dash of nutmeg (optional)
  • 1/2 cup cream
  • 6 ounces Cabot Vermont Sharp Cheddar, or Extra Sharp Cheddar, shredded (about 1 1/2 cups)
  1. PREHEAT oven to 325°F. Lightly butter an 8 x 8 inch baking dish.
  2. COOK Brussels sprouts in boiling water until tender when pierced.
  3. DRAIN sprouts. Smash the sprouts in a large bowl with the back of a spoon until chunky and add salt and pepper.
  4. ADD a dash of nutmeg if desired and stir in cream and about 1 cup cheese.
  5. SPOON into the 8 x 8 baking dish and cover with the remainder of cheese.
  6. BAKE 25-35 minutes or more until golden brown.
