While that cooks, you can prep your veggies—crisp sliced cucumbers, shredded carrots or snow peas and bell pepper.

As soon as the tempeh comes out hot and crispy, toss it directly into a bowl with sweet chili sauce until every piece is perfectly coated. Finally, build your bowl by layering a base of rice or greens, arranging your favorite crisp summer veggies, and piling on the sweet chili tempeh. Top it all off with the chopped peanuts for an extra layer of crunch. It’s bright, satisfying, and won’t heat up your kitchen.
