This is one of my family’s all-time favorite things. In fact, I think they will purposely leave bananas to sit and get overripe JUST so I will bake up a batch of that delicious bread. And since it’s really a pretty simple recipe, I never complain.

You probably have the majority of ingredients on hand. Once you get your siggi’s you are ready to roll. Prep takes about 5 minutes and then you have to be patient. The bread takes about an hour to bake. But, that delicious bread is definitely worth the wait.

Chocolate Chip Banana Bread

Ingredients
  

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 eggs
  • 3/4 cup sugar
  • 6 tbsp melted butter
  • 1/4 cup siggi's® Vanilla Skyr
  • 1 tsp vanilla extract
  • 3 overripe bananas - mashed
  • 10 oz semi-sweet chocolate chips - divided

Instructions
 

  • Preheat oven to 350º. Spray a 9"x5" loaf pan with cooking spray and set aside.
  • In a small bowl, add the flour, baking soda, baking powder, salt, cinnamon and nutmeg and stir to combine. Reserve 1 tablespoon of the mixture and toss with 8 oz of the chocolate chips.
  • In a large bowl add the eggs and sugar and whisk to combine.
  • Add the melted butter, siggi's® Vanilla Skyr, vanilla extract and mashed bananas and stir until combined.
  • Fold the dry ingredients into the wet ingredients, just until combined.
  • Add the flour coated chocolate chips to the mixture and gently fold to combine.
  • Pour the mixture into the prepared pan and top with the remaining 2 oz of chocolate chips.
  • Bake for about 1 hour or until golden and an inserted toothpick comes out clean.
  • Allow to cool int he pan for about 5 - 10 minutes. Remove from pan and place on a rack to let cool until ready to slice and serve.
