While a cream cheese frosting may be the usual topping for carrot cake, I prefer the freshness that ricotta bring to the frosting. All you need is six ingredients for great taste. And face it, a homemade frosting just can’t be beat!

So when you want a sweet treat, grab a container of Ricotta Cheese and pull out your blender. In a matter of minutes, you will have the most amazing frosting ever. Use it for a batch of cupcakes … carrot cake, chocolate, vanilla or whatever cake you love.

Ricotta Cheese Frosting

Ingredients
  

  • 8 oz Galbani® Whole Milk Ricotta Cheese - at room temperature
  • 8 oz unsalted butter - softened
  • 4 - 5 cups powdered sugar
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • pinch salt

Instructions
 

  • Add the butter and ricotta to the bowl of your stand mixer. Beat on high until light and fluffy.
  • Mix in salt and vanilla extract.
  • Gradually add the powered sugar a cup at a time until completely combined and the frosting is your preferred consistency. You may or may not need all 5 cups of sugar. If the frosting becomes too thick, add a little cream as needed.
  • Use to frost your favorite cake or cupcakes.
  • Refrigerate until ready to serve.
