While potato and pasta salads are a good option, I like to offer up lighter options that take advantage of tasty summer produce. And since my garden is overflowing with cucumbers, I thought it would be the perfect time for a big batch of my Summer Cucumber & Avocado Salad with Arugula Pesto.

Whether you are planning a picnic, hosting a backyard BBQ or need a tasty side to bring to a potluck, this salad is sure to impress and refresh your guests. The combination of crisp cucumbers and creamy avocados creates a delightful contrast of textures, while the vibrant flavors of arugula pesto add a zesty twist. But, it’s the Galbani Fresh Mozzarella that really makes this veggie salad sing!

To make this refreshing summer salad, start by thinly slicing fresh cucumbers and dicing ripe avocados. Place them in a large bowl with sliced red onion, halved cherry tomatoes and lots of delicious Galbani® Fresh Mozzarella Cheese and gently toss to combine. Next, prepare the arugula pesto by blending together fresh arugula, garlic, walnuts, Parmesan cheese, olive oil, salt, and pepper until smooth.

Pour the arugula pesto over the veggies and stir gently to coat the ingredients. With very little effort, you have a fresh summer salad that is sure to be at hit at your next gathering.

Summer Cucumber & Avocado Salad with Arugula Pesto

Ingredients
  

Arugula Pesto

  • 2 cups baby arugula
  • 2 cloves  garlic
  • 1/2 cup olive oil
  • 1/4 cup walnuts
  • 1/3 cup Parmesan cheese
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper

Cucumber Salad

  • 2 cups cucumber - sliced
  • 1 cup avocado - diced
  • 1/4 cup red onion - sliced
  • 1 pint cherry tomatoes - halved
  • 8 oz Galbani® Fresh Mozzarella - cut into 1" chunks

Instructions
 

Argula Pesto

  • Make the arugula pesto by adding the arugula, garlic and walnuts in a food processor and pulse until chopped.
  • Drizzle olive oil into mixture pulsing until smooth.
  • Add parmesan, salt & pepper and pulse to combine. Set aside.

Cucumber Salad

  • Add the salad ingredients to a large bowl and gently toss with the prepared Arugula Pesto. Serve and enjoy1
