For the 4th of July, I use red, white and blue sprinkles. To serve these at Christmas, I go with red and green sanding sugar. Then for Valentine’s Day, I simply mix in pink hearts and voila… a cookie for any occasion!
To get started grab your favorite sugar cookie recipe or even a mix and get some cookies going. Make your dough or mix and add sprinkles as the very last step before baking. And speaking of baking, the trick to get the best result is to slightly underbake your sugar cookies. Overcooked cookies will be too hard… you want that perfect soft cookie bite paired with that amazing Breyers Ice Cream for the ultimate ice cream sandwich.
Once you have baked and cooled your cookies completely, you just need to add your favorite Breyers Ice Cream.
I personally think vanilla is ideal for these cookies, but you can add your favorite flavor or mix and match if you’d like. Just add a scoop between two cookies and you are in business. I pop the ice cream out of the cup, slice it in half and sandwich the ice cream slice between the cookies for the perfect amount of delicious ice cream every single time.

Patriotic Ice Cream Sandwiches
Ingredients
- 17.5 oz package sugar cookie mix - prepped according to package directions
- 1/2 cup festive sprinkles
- 1.5 qt Breyers Natural Vanilla Ice Cream
Instructions
- Preheat oven to 350º F.
- Prep the cookies according to package instructions then mix in the sprinkles.
- Drop dough 2 1/2 inches apart on ungreased cookie sheet.
- Bake according to directions reducing the time by 1 minute.
- Cool 2 minutes before removing from cookie sheet. Cool completely before adding the ice cream.
- To fill the ice cream sandwiches, work in batches making a few sandwiches at a time.
- Scoop about 3 oz of ice cream between two cooled cookies and press gently to form the ice cream sandwich.
- Repeat to make the remaining ice cream sandwiches. Freeze until ready to serve.
