Preheat oven to 350ยบ F.
Prep the cookies according to package instructions then mix in the sprinkles.
Drop dough 2 1/2 inches apart on ungreased cookie sheet.
Bake according to directions reducing the time by 1 minute.
Cool 2 minutes before removing from cookie sheet. Cool completely before adding the ice cream.
To fill the ice cream sandwiches, work in batches making a few sandwiches at a time.
Scoop about 3 oz of ice cream between two cooled cookies and press gently to form the ice cream sandwich.
Repeat to make the remaining ice cream sandwiches. Freeze until ready to serve.
