Sticky Honey Ginger Pork

Ingredients
  

Sauce

  • 1/2 cup soy sauce
  • 1/3 cup water (+ 1 tablespoon) - divided
  • 1/4 cup honey

PORK

  • 1 pkg Smithfield® Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin - cut into bite-sized cubes
  • 3 tbsp corn starch - divided
  • 2 tbsp vegetable or canola oil
  • 1 tsp sesame oil
  • 2 cups broccoli florets
  • 2 oz pea pods
  • 1 tsp chili flakes
  • 2 garlic cloves - chopped
  • 1-1/2 tbsp grated fresh ginger
  • cooked rice - for serving
  • sliced green onion - for garnish, if desired

Instructions
 

SAUCE

  • Add the soy sauce, 1/3 cup of water and honey to a small bowl and stir to combine. Set aside.

PORK

  • Toss the cubed pork with 2 tablespoons of corn starch and mix until coated.
  • Cook the pork in batches: Heat 1 tablespoon of oil in a large non-stick skillet and add half the pork. Cook over medium high heat, for 4 - 5 minutes until the pork is browned and cooked through. Remove to a bowl. Add the remaining oil and cook the remaining pork. Remove to bowl and set aside.
  • Add the sesame oil to the pan and cook the broccoli and pea pods for 2 - 3 minutes, until crisp tender.
  • Add the garlic and ginger and cook for an additional minute, until fragrant.
  • Pour in the sauce mixture and bring to a boil over medium high heat. Cook for 2 minutes then add the slurry (1 tablespoon corn starch mixed with 2 tablespoon of water) and cook for another 2 minutes, until thickened.
  • Add the cooked pork and toss to coat.
  • Serve the pork over cooked rice and top with green onions.
