Sticky Honey Ginger Pork

Ingredients
  

Sauce
  • 1/2 cup soy sauce
  • 1/3 cup water (+ 1 tablespoon) - divided
  • 1/4 cup honey
PORK
  • 1 pkg Smithfield® Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin - cut into bite-sized cubes
  • 3 tbsp corn starch - divided
  • 2 tbsp vegetable or canola oil
  • 1 tsp sesame oil
  • 2 cups broccoli florets
  • 2 oz pea pods
  • 1 tsp chili flakes
  • 2 garlic cloves - chopped
  • 1-1/2 tbsp grated fresh ginger
  • cooked rice - for serving
  • sliced green onion - for garnish, if desired

Method
 

SAUCE
  1. Add the soy sauce, 1/3 cup of water and honey to a small bowl and stir to combine. Set aside.
PORK
  1. Toss the cubed pork with 2 tablespoons of corn starch and mix until coated.
  2. Cook the pork in batches: Heat 1 tablespoon of oil in a large non-stick skillet and add half the pork. Cook over medium high heat, for 4 - 5 minutes until the pork is browned and cooked through. Remove to a bowl. Add the remaining oil and cook the remaining pork. Remove to bowl and set aside.
  3. Add the sesame oil to the pan and cook the broccoli and pea pods for 2 - 3 minutes, until crisp tender.
  4. Add the garlic and ginger and cook for an additional minute, until fragrant.
  5. Pour in the sauce mixture and bring to a boil over medium high heat. Cook for 2 minutes then add the slurry (1 tablespoon corn starch mixed with 2 tablespoon of water) and cook for another 2 minutes, until thickened.
  6. Add the cooked pork and toss to coat.
  7. Serve the pork over cooked rice and top with green onions.
