That Mediterranean Hummus & Quinoa Bowl is my idea of the ultimate lunch! It’s colorful, packed with the good stuff and tastes absolutely AMAZING! Paired with NEW BFree Naan Breads, it’s my current obsession. In fact, I have had that same meal 3 days in a row AND will be enjoying it again tomorrow …. it really is that good!

Just cook up a big pot of quinoa at the beginning of the week and then you just have to build your bowl when you get hungry. Or if you are into the whole meal prep thing, you can absolutely prepare several bowls ahead of time and then just grab and go.

Now you can use a spoon if you want, but I would highly recommend just cutting up a BFree Naan Bread and then using it to scoop up all that goodness. You get the ultimate pop of flavors and textures that is very satisfying and oh so good!

Mediterranean Hummus & Quinoa Bowl

Ingredients
  

  • 1/4 cup cooked quinoa
  • 1/4 cup hummus
  • 1/4 cup chickpeas - rinsed and drained
  • cherry tomatoes - halved
  • 1 tbsp kalamata olives
  • sliced cucumber
  • thinly sliced red onion
  • 1 tbsp crumbled feta
  • 1 tsp olive oil
  • salt & pepper - to taste
  • 1 BFree Naan Bread - warmed and cut into 8 pieces for dipping

Instructions
 

  • Place the quinoa, hummus and chickpeas in a bowl.
  • Add the cucumber, tomatoes, olives and onion.
  • Add the crumbled cheese and season with salt and pepper.
  • Drizzle with olive oil and serve with BFree Naan Bread.
