Mediterranean Hummus & Quinoa Bowl

Ingredients
  

  • 1/4 cup cooked quinoa
  • 1/4 cup hummus
  • 1/4 cup chickpeas - rinsed and drained
  • cherry tomatoes - halved
  • 1 tbsp kalamata olives
  • sliced cucumber
  • thinly sliced red onion
  • 1 tbsp crumbled feta
  • 1 tsp olive oil
  • salt & pepper - to taste
  • 1 BFree Naan Bread - warmed and cut into 8 pieces for dipping

Method
 

  1. Place the quinoa, hummus and chickpeas in a bowl.
  2. Add the cucumber, tomatoes, olives and onion.
  3. Add the crumbled cheese and season with salt and pepper.
  4. Drizzle with olive oil and serve with BFree Naan Bread.
