I love a good breakfast casserole, especially around this time of year. They’re so warming and filling—absolutely perfect on a chilly fall or winter morning. And since they can feed a group, they are especially nice to help feed all the holiday visitors that are in abundance this time of year.

Normally I make a breakfast casserole in a standard baking dish, but I think in terms of presentation we can do a little better for the holidays, don’t you? 

The solution is a simple as pulling out your average bundt pan. Mix up your ingredients, pour into the pan, pop in the oven, and you’re good to go. Not only does the resulting circular shape and the color of the ingredients resemble a festive holiday wreath, it’s just as easy to divide up and serve once it’s time to eat.

Ingredients can vary when it comes to a breakfast casserole. But no matter the flavor of casserole you choose, cheese is an absolute must-have ingredient. And when it comes to cheese, Amish Country Cheese is the way to go.

For my recipe I chose the Swiss Colby. But, you can use any variety of that tasty Amish Country Cheese when you go to make my Breakfast Bundt Casserole.

Breakfast Bundt Casserole

Ingredients
  • 6 eggs
  • 1 1/2 cups milk
  • 4 pieces of stale or day old bread, cubed
  • 1 cup diced ham
  • 8 oz Amish Country Swiss Colby Cheese, shredded
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup green bell pepper, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Instructions
  1. Preheat oven to 350º F.
  2. Spray a bundt pan with cooking spray and set aside.
  3. Beat the eggs with the milk in a large bowl.
  4. Add the cubed bread, ham, cheese and salt & pepper and stir to combine.
  5. Allow to sit for 5 minutes.
  6. Pour the mixture into the prepared bundt pan.
  7. Bake at 350º for 45 – 50 minutes, or until set.
