The weekend is the perfect time to gather your family. What better way to get everyone together than with a tasty meal?!

We all get up really early during the week so I try to sleep in on the weekend. Those few extra hours are exactly what I need to recharge and get ready for another long week. My guys take the opportunity to sleep in as well. You know teenagers, they’ll sleep all day if they can.

With everyone waking up late, I’ll often skip breakfast on the weekend and opt for a brunch instead. That later meal gives us all time to start the day at a much more relaxed pace than what we have during the week. I like to take the opportunity to make something special when I can.

But making something special doesn’t mean I have to spend a ton of time in the kitchen OR a lot of money on ingredients.

With the cash back offers on the Ibotta app, I can get breakfast essentials at a great price. Check your Ibotta app for savings on key ingredients to serve up a tasty breakfast that your family will love.

Plus, check the app for bonus savings. You’ll get a little extra cash back when you purchase 3 or more participating items. Just mix and match and bring home everything you need to give your family a great start to the day!

Need some recipe inspiration to help you serve up great taste fast?

One of our favorite brunch meals is an Egg Roulade. While it sounds fancy, it’s really just a rolled up omelet. You can fill it with anything you like…any meat, cheese or veggie that you have handy. You really can’t go wrong with whatever you choose.

Gather your ingredients when you shop and try my Chive And Onion Egg Roulade with Bacon.   I can make this one with my eyes closed at this point. With maybe 5 minutes of prep and about 10 minutes of bake time, you have an impressive meal that tastes absolutely amazing.

Preheat your oven to 350º and fit a sheet pan with parchment paper, allowing a little overhang on all sides. Then butter the parchment paper and set aside.

Next you want to mix your eggs with some heavy cream, salt, pepper and a little flour.

To avoid any messes, I place my prepared sheet pan on the oven rack and then add the egg mixture. Gently slide in the rack and bake the eggs for about 8 to 10 minutes or until set.

While still warm, drop dollops of Philadelphia Chive and Onion Cream Cheese over top of the cooked eggs. You can really use any favor of Philadelphia Cream Cheese that you love but I really like the taste of the onions & chives with the tomatoes. It’s the perfect combo.

Philadelphia Chive and Onion Cream Cheese Spread is made with fresh milk and cream plus real chives and onions. The spreadable cream cheese spread has no artificial preservatives, flavors or dyes.

Then sprinkle the Oscar Mayer Fully Cooked Bacon, some tomatoes and a little chopped scallion. Top with additional salt and pepper if desired.Roulade on I Heart Publix 1

Now it’s time to roll it all up. I find it’s easier if you use the parchment paper. Slowly lift the paper and let gravity do all the work.

Once rolled, just cut and serve! Pair with your favorite Gevalia coffee or Café at Home product for a delicious meal that will help you make the most of your relaxing weekend.
