While lasagna seems like it may be hard, it’s actually crazy simple to prepare! All you have to do is layer some meat sauce with cooked pasta and lots of cheese.

Now most all lasagna recipes include a noodle and some mozzarella. I consider those ingredients secondary to the star of the recipe, The key to a tasty lasagna is definitely the meat sauce. At my house we like our meat sauce made with Purnell’s Sausage instead of ground beef.

With ground beef, you have to add a bunch of seasonings to give it flavor. But Purnell’s Italian Sausage is already packed with great flavor. You just have to unwrap it and toss it in the skillet. There’s no need for lots of different seasonings and spices. You get great flavor without any effort at all.

A tasty lasagna is really easy to make. First just grab a package of Purnell’s sausage and brown it with some minced garlic. You can use any variety of that tasty sausage that you love. We LOVE the Italian Sausage in this recipe but you can use the hot or medium sausage if you prefer and it will taste amazing!

Once that tasty sausage is browned, stir in the tomato sauce and some spices and let it simmer on the stove. The mixtures gets rich and amazing!

Cindy’s Lasagna on I Heart Publix 4While the sauce is cooking, I get the noodles and the filling ready. So now is the time to boil your noodles and prep the ricotta/cottage cheese mixture so it will be ready when it’s time for assembly. Everything gets mixed up in a bowl and then set aside until needed.

It’s assembly time!

Start by spreading a thin layer of sauce into the bottom of the casserole dish. That’s followed by a layer of the cooked lasagna noodles. They go right on top of the sauce.

Next, you’ll grab that ricotta mixture that you prepped ahead of time and carefully spread a third of the mixture on top of the noodles.

Sprinkle a third of the mozzarella cheese over the ricotta mixture. I really never measure…in my world there is never enough cheese in a lasagna!

Now you just repeat those layers two more times…sauce, noodles, ricotta mixture and mozzarella.

Once you have the casserole dish filled will all those delicious layers of flavor, pop it in the oven and let it bake up until it the cheese bubbly and the top is golden.

Believe it or not, once it’s done…that’s when the hard part starts. While you will want to cut into that pan of goodness right when it comes out of the oven, you really need to wait a few minutes.

If you let the lasagna cool slightly, it will be much easier to cut and serve. Those few minutes allow the cheese to set slightly so that you don’t end up with a a pile of messy lasagna that spreads all over the plate. A nice firm square of tasty lasagna is a thing of beauty.

Ingredients
  • 1 lb. Purnell’s “Old Folks” Italian Sausage
  • 10 oz. lasagna noodles
  • 2 cups tomatoes, crushed
  • 2 cloves garlic, minced
  • 1/2 cup grated Romano cheese
  • 2 tbsp parsley chopped
  • 2 eggs, well beaten
  • 3 cups cottage cheese (or ricotta cheese)
  • 1 1/2 tsp oregano
  • 1 tbsp basil leaves
  • 1/2 tsp salt, divided
  • 1/2 tsp black pepper
  • 1 lb. mozzarella cheese, grated or sliced thin
  • 12oz can of tomato paste
Instructions
  1. Brown sausage and garlic slowly; pour off excess grease and add basil, salt, oregano, tomatoes and tomato paste. Simmer 20 minutes, uncovered. Add small amount of water if necessary
  2. In a bowl, mix cottage cheese (or ricotta cheese), romano cheese, parsley flakes, eggs, salt and pepper.
  3. In a 13 x 9 x 2 1/2 inch baking dish, place 1/2 the lasagna noodles, then spread 1/2 the cheese filling on the noodles, spread 1/2 the mozzarella cheese on cheese filling, then spread meat sauce. Repeat layers and bake 30 minutes at 375ºF (or until top is golden).
  4. Allow to cool slightly before slicing and serving.

  2. A little confused on the ricotta cheese it states 3 cups of ricotta or cottage cheese and then further down on the recipe it states 3 cups of cottage cheese
