My guys absolutely LOVE this recipe so I like to pull it out at least once per month as a nice change of pace from our usual Taco Tuesday meal. It packs all the delicious flavors of a taco into an easy to prepare (and easy to serve) meal.
With traditional tacos you either have to take the time to individually stuff a bunch of taco shells or put everything out and let your family build their own tacos. But with this Beefy Taco Pie you layer everything into a pie pan or springform pan and then just cut and serve…easy breezy!
I also love this meal as it’s one that I can prep ahead of time. So if I know I will have a busy day, I will get the pie set up in the morning or even the night before. Then I can just pull it out of the fridge and toss in the oven and it will be ready in about 15 minutes.

- $1.25/2 Knorr Rice or Pasta Sides 3.8-5.7oz Publix Digital Coupon

- 1 lb. ground beef
- 1 Tbsp. chili powder
- 1 can (14.5 oz.) diced tomatoes, drained
- 1 can (15.25 oz) black beans
- 1 cup corn kernels
- 1 package Knorr® Fiesta Sides™ – Taco Rice, prepared according to package directions
- 1 cup shredded cheddar cheese
- 2 (10-in.) burrito size flour tortillas
- shredded iceberg lettuce, tomatoes, salsa, sour cream or your other favorite toppings
- PREHEAT oven to 350°. Brown ground beef and chili powder in large nonstick skillet over medium-high heat, stirring occasionally, about 4 minutes. Stir in tomatoes, black beans and corn and cook an additional 5 minutes.
- ARRANGE 1/3 of the beef mixture in 9-inch deep dish pie plate or springform pan. Evenly spread 1/3 of the prepared Knorr® Fiesta Sides™ – Taco Rice over top. Sprinkle with 1/4 cup cheese, then top with 1 tortilla. Repeat layers ending with remaining 1/4 cup cheese.
- BAKE uncovered 15 minutes or until heated through and cheese is melted. Garnish with lettuce, tomatoes, sour cream or your favorite toppings; now it’s delicious. Dig in!
