Easy African Peanut Stew With Chicken

What you see above is a bowl full of one of my all-time favorite things…African Peanut Stew with Chicken.

Some folks call it a soup or a stew and others call it a curry. I just call it delicious! And thanks to the quick convenience of Springer Mountain Farms Fully Cooked Chicken, it’s super simple to make! Once you gather your ingredients, you can have this one on the table in less than 30 minutes.

Now that the weather is starting to get a bit chilly, I will make a pot of that amazing stew at least a couple of times each month. I typically make a double batch on Sunday so we can have it for dinner and then I can eat the leftovers for lunch throughout the week.

What makes this recipe so quick is that you don’t have to spend a lot of time cooking the chicken. Springer Mountain Farms Fully Cooked Chicken is ready to go right from the package. You get the convenience and great taste without it taking a ton of extra time. I don’t know about you but I can use all the extra time that I can get.

I almost always have a package on hand for a quick meal. Obviously, the chicken is amazing in this recipe but I also use it constantly for meals like salads, burrito bowls, soups, casseroles and so much more.

Available with the fresh meat at your local Publix, there are two varieties to choose from. Try them in your favorite recipe and enjoy a little extra time when YOU need it.

Easy African Peanut Stew With Chicken

Ingredients
  • 1 teaspoon canola oil
  • 1 large onion chopped
  • 1/2 jalapeño, seeded and chopped
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup tomato paste
  • 1 teaspoon cumin
  • 2 sweet potatoes, cut into 1-inch cubes
  • 32 oz chicken broth
  • 1/4 cup coconut milk
  • 1 cup peanut butter
  • 8 oz Springer Mountain Farms Grilled Fully Cooked Chicken Breast Strips, cut into bite sized pieces
  • Cooked rice for serving
  • chopped peanuts, for garnish
  • cilantro, for garnish
Instructions
  1. Heat the oil in a large pot and cook the onion and jalapeño for 3 – 4 minutes, until softened.
  2. Add the ginger and cook an additional minute, until fragrant.
  3. Stir in the tomato paste and cumin then add the sweet potatoes and chicken broth.
  4. Bring to a boil and cook for 10 minutes, or until potatoes are tender.
  5. Stir in the coconut milk, peanut butter and Springer Mountain Farms Grilled Fully Cooked Chicken.
  6. Serve over rice topped with chopped peanuts and cilantro

 

Everything cooks in one pot making this an ideal meal for a busy weeknight. It’s easy to prepare and cleanup is a breeze. But, it’s the taste that will have you adding this dish to your menu all the time.

You’ll notice that this meal doesn’t require a ton of ingredients. Chances are good that you have at least some of them on hand right now. Add anything that you might need to your shopping list and grab them the next time you shop at Publix. Whip up a batch for your family and enjoy big flavor without a lot of effort.
