When you think about a trifle, ice cream might not come to mind. But, I think it should!

An ice cream trifle is one of the easiest and most delicious treats ever. You get layers of great taste and texture with almost no effort. You can use a large trifle dish to feed your family or even make a single serving and enjoy all by yourself.

And when it comes to flavor combinations, the options are endless. Use cookies, brownies, graham crackers or whatever you love and layer with any of your favorite Breyers Ice Cream flavors and you are in business. I thought I’d share one of our favorite trifle combos…my Chocolate Peanut Butter Ice Cream Trifle.

This particular treat never lasts long at my house. I barely get it made before my guys are digging in the dish to fill their bowls. Really, I can’t blame them…this recipe is absolutely delicious!

Chocolate Peanut Butter Ice Cream Trifle
Author: Michelle
Ingredients
  • 1 1/2 cups crushed peanut butter cream cookies
  • 2 oz chocolate, chopped fine (use a bittersweet or semi sweet baking bar for best results)
  • 2 oz heavy whipping cream
  • 1 quart Breyers Chocolate Peanut Butter Ice Cream
  • 2 cups whipped topping
  • 1/2 cup peanut butter
Instructions
  1. Make the ganache by adding the chocolate to a heatproof bowl, set aside.
  2. Pour the heavy whipping cream into a microwave safe bowl and heat for 45 seconds to 1 minute. Watch carefully and do not allow it to boil or bubble over.
  3. Pour the warm heavy whipping cream over the chopped chocolate and allow it to sit for 3 minutes. Start whisking the mixtures slowly from the middle of the bowl, and continue whisking in one direction until the mixture is silky smooth and combined.
  4. Allow to cool for 5 – 7 minutes.
  5. Assemble the trifle by adding 1 cup crushed cookies to the bottom of a bowl or trifle dish.
  6. Drop the ice cream by scoops to cover the cookies.
  7. Top with a layer of chocolate ganache followed by the whipped topping.
  8. Sprinkle with the remaining crushed cookies.
  9. Heat the peanut butter in the microwave for 30 seconds and drizzle over the cookies,
  10. Serve immediately.
