I have been making this recipe for years and often adjust based on what I have handy. Sometimes I add beans, other times I stuff it into peppers. The recipe I am sharing below is my base recipe, feel free to adjust based on your tastes. I typically serve it with tortillas or chips and there are never, ever any leftovers.

I choose Success Rice for this recipe as it helps me get dinner on the table in a flash. If you start the rice and the beef at the same time, you can have dinner on the table in about 15 minutes. That makes this recipe perfect for any night, even a busy weeknight!

You can use any variety of Success Rice that you love. I happened to have a box of Success Jasmine Rice in my pantry so that’s what I used. It love that fragrant, fluffy rice so I typically always have it on hand. It’s the quick and easy rice that’s perfect in all your favorite meals. It’s also naturally Gluten Free, Non-GMO Project Verified and free of MSG or preservatives.

Southwestern Beef And Rice Skillet

  • 1 bag Success® Jasmine Rice
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup frozen corn kernels
  • 1 can diced tomatoes with green chilis (10 oz)
  • 3/4 cup water
  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • 2 teaspoons ground cumin
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese (or Colby Jack or Monterey Jack)
  1. Cook the Success® Jasmine Rice according to package instructions,
  2. Cook the beef and onion in a large skillet, stirring to crumble the meat at it cooks.
  3. Brown the beef and drain any fat.
  4. Add the garlic and cook 1 minute, until fragrant.
  5. Add the canned tomatoes, water and all spices. Cook for 3 – 5 minutes over medium, until most of the water has absorbed. Remove from heat.
  6. Stir in the cooked rice and sprinkle with cheese, cover and let sit 2 minutes, until the cheese has melted.
