It’s packed with AMAZING flavor, lots of protein and crazy simple to prepare. Serve up with some roasted veggies for a meal your family will absolutely love!

Sabich Sandwich

Ingredients
  • 1 8oz Harissa Cubes (can sub Moroccan Cubes)
  • 1/4 large eggplant, cubed
  • Israeli Salad
  • 4 Pitas
  • Hummus
  • [u]ISRAELI SALAD[/u]*
  • 1/2 cucumber, diced
  • 1 medium tomato, diced
  • 1 small bell pepper, deseeded and diced
  • 1/2 small red onion, diced
  • 1/2 c packed flat leaf parsley & mint, roughly chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • Salt & pepper to taste
Instructions
  1. Simply cube the eggplant in 1/4” squares, toss in a bowl with our tofu cubes, and place in a toaster oven at 350 for 8 minutes or until eggplant is tender.
  2. Throw together an Israeli salad.
  3. Spread a thick layer of hummus into pita & layer in the Israeli salad, roasted eggplant & tofu cubes.
