I absolutely love the combination of savory and sweet. When I was younger I would turn my nose up to the addition of fruit in anything but a dessert. Then I came to my senses! Now I look for any way to get fruit in as many recipes as possible.
When I spotted the Black Beans and Rice Mango Salad recipe, I knew I had to give it a try. There are only a few ingredients but the combination is absolutely amazing.
It starts with a cup of the new Minute® Ready to Serve Cilantro & Lime Jasmine Rice. The rice is lightly seasoned and is a fabulous base for the salad. Then you add in some black beans, tomatoes, green onion and some super sweet mango. With the addition of your favorite vinaigrette, you have a super quick meal that’s packed with huge flavor.

- Garlic & Olive Oil Jasmine Rice
- Cilantro & Lime Jasmine Rice
- Southwest Pinto Beans
Simply heat it in the microwave and eat it right out of the cup! Great for a quick lunch, a better-for-you snack or an easy add-on at dinner. For an extra boost of goodness, add veggies, proteins or your favorite sauces. Mix it up and make it yours!

- 1 cup Minute® Ready to Serve Cilantro & Lime Jasmine Rice
- ½ cup cooked black beans
- ½ cup mango, chopped
- ½ cup cherry tomatoes, halved
- 1 green onion, sliced
- 3 tablespoons prepared vinaigrette
- Heat rice according to package directions. Cool slightly.
- In a medium bowl combine black beans, mango, tomatoes, green onion and vinaigrette.
