I am a huge fan of any kind of cheese dip. But, my absolute favorite is beer cheese dip. I love to plunge bread, pretzels, chips, veggies and just about anything in that tasty dip. Heck, I even love it on a burger or a hot dog.

For the longest time, I only had beer cheese dip while out at a restaurant. That changed when I received a fondue pot as a gift a few years ago. The pot came with all kinds of tools and a big booklet filled with recipes. One of the recipes just happened to be for Beer Cheese Dip!

If I remember correctly, that was the first recipe that I ever made and served in my fondue pot. Since my first batch, I have made a few adjustments to that original recipe. And now, I enjoy my favorite dip whenever I get a hankering.

You don’t need a fondue pot to enjoy my recipe. If you are putting the dip out for guests to enjoy, pop it in a slow cooker on warm or just reheat in the microwave as needed. Honestly, it never lasts very long at my house so there’s no time for it to get cold.

The key to creating my Creamy Beer Cheese Dip is using ingredients with great flavor. You want to use a beer that you enjoy drinking and a tasty cheese like Castello Gouda. With the addition of a few additional ingredients, you can serve up amazing taste for your next night in!

Creamy Beer Cheese Dip

Ingredients
  • 2 tablespoons of butter
  • 2 tablespoons flour
  • 4 oz beer – [i]choose a good craft beer with a flavor you enjoy[/i]
  • 3/4 cup milk
  • 6 oz Castello Gouda Cheese, shredded
  • 1 1/2 teaspoons dijon mustard
  • 1/2 teaspoon salt
  • 1/4 – 1/2 teaspoon cayenne pepper (more if desired)
Instructions
  1. Melt the butter in a small saucepan over medium heat.
  2. Add the flour and cook for 2 minutes, stirring constantly. Do not allow to burn…the color should be a very light caramel color.
  3. Whisk in half of the milk and stir until creamy.
  4. Slowly add the remaining milk and beer, stirring constantly until smooth and creamy.
  5. Stir in the mustard, salt and cayenne pepper.
  6. Gradually add the cheese, stirring to combine.
  7. Season with additional salt or cayenne as needed and enjoy!
  8. Serve with bread, pretzels, veggies or as a topping to a tasty burger.
