We are about to hit a super busy time of year. The kids are headed back to school in a few weeks, and soon we’ll have to adjust to a new schedule. On top of that, Jeb’s football season begins and Jake will be starting up fall swim team. Needless to say, my days will be soon be VERY long and hectic!
I try to simplify my week with a combination of cooking ahead and planning meals that allow me to cook once but eat twice. It takes a little planning but it helps me survive a stressful week without a ton of effort. The key is being prepared. I’ll often prep meals and cook ahead on Sunday. The labels are especially important as I can often get my husband to start dinner if he happens to make it home before me.
