With just the few minutes it took to brown the meat, then a couple of minute to assemble and bake...in no time flat I had a tasty meal that we DEMOLISHED. I will even admit that my guys weren't the first ones to clean their plates! This is totally my kind of meal and I was the right there with them fighting for seconds!

Now I have shared some deals recently and there has been lots of questions about this meat. Starting with...where do you find it? You want to look for it in the FRESH MEAT section at your local Publix. My store keeps it with the ground turkey. Keep your eyes peeled for the boxes like the ones above you'll spot them in no time!
Now on to the boxes...yes, there is meat in there. When you pull off the outer box you will find a chub of meat—or a tube of meat, similar to the packaging that you'd find sausage in. I actually like the packaging as it's compact and takes up very little space in my already overpacked fridge. So my piece of advice to you is don't be intimidated by the package. Each package has lean cuts of hand-crafted meats made in small batches.
What I love is that those lean meats include simple, honest ingredients making healthy taste good! So that Sweet Thai Ground Chicken that I use in my recipe is premium chicken with ginger, Kaffir, lime, cilantro, curry, soy sauce and Thai chili peppers. Guess what else that means...since the amazing flavor it's already in the meat, I don't have to add it myself—saving me time AND expense!
Take advantage of the 2/$8 sale and stock up on all the delicious varieties. I have found that the meat is amazing in meatballs, meatloaf, casseroles, stuffed peppers and so many more recipes. Enjoy protein and flavor-packed meats at a great price when you shop now through 7/4 (7/3 for some).
- 1 lb Mighty Spark Sweet Thai Ground Chicken
- 4 pieces naan
- 4 tablespoons spicy Thai peanut sauce
- 1 cup mozzarella cheese, shredded
- ½ cup bean sprouts
- ¼ cup carrot, shredded
- ¼ cup cilantro leaves
- 1 - 2 green onions, sliced
- Heat a skillet to medium high and cook Mighty Spark Sweet Thai Ground Chicken for 7 - 10 minutes until cooked through, crumbling while stirring. Transfer to a paper-lined plate and set aside.
- Preheat oven to 400º F.
- Spread 1 tablespoon of spicy Thai peanut sauce over each naan.
- Sprinkle the meat and cheese evenly over each naan and bake for 10 minutes until cheese is bubbly.
- Remove from oven and top with bean sprouts, carrots, cilantro and green onions.
