Mediterranean Flatbread

I have been sharing some of my favorite recipes to help you put that great Bertolli® Riserva sale to use. I just wanted you to see that while the jars of sauce are fantastic poured over a bowl of noodles, they are really what I consider meal helpers. These are things that you keep in hand that you can pull out whenever you need it and put together a fabulous meal without a ton of effort.

The recipe I am sharing today is the perfect example. I use the Bertolli® Riserva to whip up the most incredible Flatbread recipes! With three pizza loving guys in my house this meal is always a huge hit. The best part is that you can customize each flatbread so that everyone at the dinner table is happy! Think of the crust and the Riserva sauce as the base for a delicious flatbread…you just add a few extra toppings and voila–a perfect meal in just minutes!

I thought I’d share my favorite Mediterranean Flatbread version. It’s packed with such great flavor and it’s ready in just minutes. You can also toss on a little grilled chicken if you wanted to add a little extra protein to the meal. Honestly you can’t go wrong no matter what toppings you add!

Serves: 4 – 6
  • 1 can refrigerated pizza dough
  • 1 tablespoon olive oil
  • 1 jar (1 lb. 8 oz.) Bertolli® Riserva Asiago Cheese & Artichokes
  • 2 – 3 oz kalamata olives, halved
  • 1 8 oz can artichoke hearts, quartered
  • 2 tablespoons sun dried tomatoes packed in oil, julienne cut
  • 1 head roasted garlic
  • 8 oz crumbled feta or mozzarella
  • fresh grated parmesan cheese
  • fresh basil, chopped
  1. Preheat oven 400°.
  2. Roll out the dough into a 12×16-inch rectangle onto parchment paper. Cut rectangles into thirds. Brush each section with olive oil. Bake on cookie sheet(s) for 8 minutes.
  3. Top each flatbread with 1/2 cup Bertolli® Riserva Asiago Cheese & Artichokes, 1/3 of cheese and the toppings. Bake 8 minutes until crust is golden brown. Sprinkle each flatbread with fresh parmesan and fresh basil before serving.
