Hummus Chicken Salad Cups

Next week is Christmas and if you are looking for quick and easy appetizer options, don’t forget about the Sabra Hummus! I always have a couple of tubs of Sabra at all my get togethers. You guys know it’s the perfect dip option paired with pita, chips and veggies but did you also know it’s also a perfect ingredient in dozens of quick and easy appetizers too?!

It’s a fabulous spread for mini cucumber sandwiches and great in my Chipotle Chicken Meatballs. TodayI thought I’d share one of my favorite holiday appetizers using Sabra Hummus – Hummus Chicken Salad Cups.

These take no time to put together and they are totally addicting. You’ll want to make a big batch as you’ll find everyone will come back to keep popping these little bite size morsels. I actually make my every day chicken salad with hummus and opt for the olive tapenade version but of course you can go with any variety that you prefer. I think the olive adds such great flavor and texture to the chicken salad. So try it first and then play around with the other varieties to see what you like best. Tip…if you like a little heat, the Supremely Spicy or Jalapeño is fantastic but might be a bit much for a gathering!

Hummus Chicken Salad Cups

Ingredients
  • 10 oz can of chicken breast, drained (can also use cooked shredded chicken)
  • 1/2 cup Sabra Hummus – I like the Olive Tapenade variety
  • 2 green onions, thinly sliced
  • 1 tomato, finely diced
  • 36 puff pastry shells, cooked according to package instructions
Instructions
  1. Combine the chicken, hummus and green onions in a medium bowl and mix to combine.
  2. Add a dollop of the chicken salad in the center of the puff pastry shell and top with diced tomatoes and additional green onion if desired.
