We eat a lot of salads at my house. They are quick, easy and very versatile…not to mention healthy! All that combined makes them a winning combination for me! Now, I know what you are thinking…salads are dull and boring. WRONG! You can whip up some fantastic dinner salads that will have your taste buds buzzing yet still keep your kitchen time to a minimum.

I thought I would share one of my all time favorite recipes – Spinach Salad With Portabello Mushrooms. I could probably eat this salad three times per week. There’s something about the sweetness of the roasted veggies with the fresh greens and that delicious Wish-Bone dressing that is fantastic. My mouth is watering just thinking about it! I do a very simple rub on my chicken and grill it up – dinner is on the table in under 30 minutes!

This is also a very economical meal, especially if you are shopping now. We have a great BOGO sale on the Fresh Express salads and spinach as well as a Publix coupon for the Wish-Bone dressing in the Smart Savings Booklet. Also, be on the lookout for peelies on the bags of salad when you are shopping and you may find additional savings too!
