No Bake Peanut Butter Oatmeal Bites

Back to school means that it’s time to start packing lunch boxes again. My boys tend to be quite picky; they won’t eat a lot of the easy prepackaged lunch items. I want them to eat healthy but I am not a morning person so I try to come up with make-ahead options to simplify things.

My No-Bake Peanut Butter Oatmeal Bites are the perfect example of a recipe that is a great make-ahead recipe. It only takes about 10 to 15 minutes but you’ll have enough bites to last all week long! The recipe is packed with a ton of protein from peanuts and peanut butter plus healthy flax seed. But it sweetened with honey and tasty candy so the kids see it as a treat. Just pop a couple of bites into a small Ziploc® container and pack them into the lunch box then the rest go into another Ziploc® storage container that’s stored in the refrigerator.

Grab them as a snack or throughout the week as needed for lunch.

No-Bake Peanut Butter Oatmeal Bites

Serves: 18 bites
Ingredients
  • 1/2 cup peanut butter
  • 1/2 cup old fashioned oats
  • 1/2 cup roasted peanuts
  • 1/2 cup shredded coconut
  • 1 – 2 tablespoons flax seed
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 cup mini M&M’s
Instructions
  1. Place everything except the M&M’s into the food processor and pulse until combined.
  2. Fold in the Mini M&M’s.
  3. Roll into 1″ balls – gently squeezing as you roll to form the ball.
  4. Place on a parchment lined pan and refrigerate for at least an hour.
  5. Transfer to a Ziploc® storage container. Refrigerate for up to one week.
