Back to school means that it’s time to start packing lunch boxes again. My boys tend to be quite picky; they won’t eat a lot of the easy prepackaged lunch items. I want them to eat healthy but I am not a morning person so I try to come up with make-ahead options to simplify things.
My No-Bake Peanut Butter Oatmeal Bites are the perfect example of a recipe that is a great make-ahead recipe. It only takes about 10 to 15 minutes but you’ll have enough bites to last all week long! The recipe is packed with a ton of protein from peanuts and peanut butter plus healthy flax seed. But it sweetened with honey and tasty candy so the kids see it as a treat. Just pop a couple of bites into a small Ziploc® container and pack them into the lunch box then the rest go into another Ziploc® storage container that’s stored in the refrigerator.
Grab them as a snack or throughout the week as needed for lunch.
- 1/2 cup peanut butter
- 1/2 cup old fashioned oats
- 1/2 cup roasted peanuts
- 1/2 cup shredded coconut
- 1 – 2 tablespoons flax seed
- 1/3 cup honey
- 1 teaspoon vanilla extract
- 1/4 cup mini M&M’s
- Place everything except the M&M’s into the food processor and pulse until combined.
- Fold in the Mini M&M’s.
- Roll into 1″ balls – gently squeezing as you roll to form the ball.
- Place on a parchment lined pan and refrigerate for at least an hour.
- Transfer to a Ziploc® storage container. Refrigerate for up to one week.

I love the little sandwich size for sure, but my favorite size is the big huge sliders. I use them to store everything, my favorite use is packing for trips. I label them with the kids names and what is in them, so anyone can grab the kids cloths and not get confused. They are Grandpa proof!
