Bell Pepper Casserole

I have told you guys before that my husband is a huge fan of casseroles. This recipe is one of his favorites. For those weeks when I have trouble coming up with a menu, Stuffed Bell Pepper Casserole is one of my favorite easy go-to dishes to prepare. You get all the great taste of a stuffed bell pepper with about half of the effort.

Simply mix up all your ingredients and then toss it in a casserole dish. Now, my boys love the filling but they are not big fans os the peppers. I chop my pepper into large chunks so that I can easily pull it out of the boys’ portion. That way that my boys will actually eat dinner without grumping.

Ingredients
  • 2 – 3 bell peppers, cut into large chunks
  • 2 cups cooked rice
  • 3/4 pound ground beef
  • 3/4 pound sausage
  • 1 cup onion, chopped
  • 2 cloves garlic, chopped
  • 12 oz tomato sauce
  • 1 cup shredded cheddar cheese
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 2 teaspoons Italian seasoning
Instructions
  1. Preheat oven to 375 degrees
  2. Add chopped bell pepper, onion, garlic, ground beef, and sausage to a large skillet and cook until meat is browned.
  3. Drain any fat.
  4. Add salt, pepper, Italian seasoning, cooked rice, tomato sauce and Worcestershire sauce and simmer for 3 minutes.
  5. Mix in 3/4 cup of cheese and then remove from heat.
  6. Pour the mixture into a large casserole dish and sprinkle with the remaining cheese.
  7. Bake at 375º for 20 minutes.
