Gazpacho

The folks at Gook Cook are having a fun promotion starting in June called “Build Your Kitchen Drawer” where you can enter to win a ton of supplies to help fill your drawer with all the essentials that you need. I am talking a ton of items. You can win up to 15 must have items to fill  your drawer with everything you need to whip up some delicious recipes. Recipes like my easy and delicious Gazpacho.

The folks at Good Cook challenged me to come up with a one pot meal using some kitchen drawer essentials. Since the weather is getting hot, I went with one of my favorite soups that you can do in one big pot or bowl. Here’s what they sent –

For my recipe, I used the Flip Measuring spoon  and the Safe-Cut Can Opener to whip up my Gazpacho. I have to admit I was thrilled to get a new can opener. My old one was rusted around the cutting blade and really needed to be replaced. I have never owned a safety opener. It took me a few seconds to figure it out but now I am hooked. That thing rocks. Super simple to use and no sharp edges. I have little ones who love to help and this is something I can now hand over to them.

The Flip Measuring spoon is also super cool. I love that it’s just one piece. There’s no ring to fumble with. You simply push the cup to invert it to the size that you need. You have 1/4 tsp, 1/2 tsp, 1 tsp, and 1 tbsp all in one little tool.

We’ve also already put the Smart Scoop Ice cream scoop to use. It was interesting and I think it’s better suited to homemade ice cream. It would work better with a softer ice cream. I also have the Good Cook Twister Ice Cream Scoop and I prefer it for store bought ice cream that tends to be a bit on the hard side.

Both the Egg Separator and the Pot Clip Holder were great little tools too. Both are very basic tools that really perform their tasks just as you expect. I’ve never had issues separating my yolks from the whites so it was fun to try. I think this would be a fabulous tool for folks who might not have mastered the skill of separating the egg. It would be a good tool for a new baker or even to have on hand when the kids are helping out in the kitchen.

Ingredients
  • 1 cup tomatoes, peeled and seeded
  • 1 bell pepper, seeded
  • 1 large Hothouse cucumber, peeled and seeded
  • 1/2 red onion (about 1/2 cup)
  • 3 cloves garlic, minced
  • 2 cups tomato juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup olive oil
  • avocado for garnish
Instructions
  1. You will want to run the veggies (cucumber, tomato, onion and bell pepper) through the food processor separately.
  2. Add each vegetable separately to the food processor and pulse until finely chopped then place in a large bowl.
  3. Once all the veggies have run through the food processor, add the remaining ingredients except the avocado. If you prefer a smoother soup, you can also use an immersion blender at this point.
  4. Stir to combine and refrigerate at least 2 hours before serving.
  5. Before serving top with sliced avocado and croutons if desired.
Notes
[i]2 hour refrigeration is a minimum. This soup is actually better if you let it refrigerate overnight![/i]
