Banana Cream Pie Ice Cream by Lisa
Yum!!! I created this ice cream recipe for use in small 1 to 1-1/2 quart ice cream freezers, but it can be easily doubled for use in larger machines. Hope you like it!
1 cup Snack Pack Banana Cream Pie Pudding
1 cup cold heavy cream
1/2 cup cold milk
1/4 cup Egg Beaters
1/2 cup packed light brown sugar
1-1/2 teaspoons pure vanilla extract
1/4 teaspoon ground cinnamon
1/8 teaspoon freshly ground nutmeg, plus more for garnish
dash salt
1/2 cup coarsely crumbled graham crackers
1/2 cup diced ripe banana

Reddi-wip Original Dairy Whipped Topping, as desired
Combine pudding, cream, milk, egg beaters, brown sugar, vanilla, cinnamon, nutmeg and salt; whisk until sugar is dissolved. Cover and refrigerate 1 hour.
Uncover and whisk mixture briefly; pour into the mixing canister of an ice cream maker and follow manufacturer’s directions for freezing. Stir graham crackers and bananas into the soft-frozen ice cream until evenly distributed. Spoon into a freezer-safe container; cover and freeze until firm. Serve topped with desired amount of Reddi-wip, sprinkled lightly with nutmeg. Yield: 1 generous quart.
