Raspberry Sriracha Pork Tenderloin

Ingredients
  

Pork Tenderloin
  • 2 1-pound pork tenderloins
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp vegetable oil
Raspberry Sriracha Sauce
  • 1/4 cup Polaner Verry Berry Raspberry Fruit Spread
  • 3/4 cup ketchup
  • 1 tbsp balsamic vinegar
  • 1 tsp Worcestershire Sauce
  • 1 tsp onion powder
  • 12 tsp garlic powder
  • 2 tsp melted butter
  • 1 tbsp sriracha

Method
 

Raspberry Sriracha Sauce
  1. Prepare the sauce by adding all ingredients to a small bowl and whisking to combine. Set aside.
Pork Tenderloin
  1. Preheat oven to 375º F.
  2. Season the pork with salt and pepper.
  3. Heat the oil in an oven-safe skillet. Add the pork and cook over medium-high heat to sear on all sides, about 5 minutes total.
  4. Brush all sides of the pork with 1/3 of the prepared sauce and place in the preheated oven. Cook for 15 minutes.
  5. Remove the pork and brush with another 1/3 of the sauce and cook an additional 10 minutes, or until an instant-read thermometer reaches 140°F.
  6. Remove from oven and allow the pork to rest for 8 - 10 minutes. Slice and serve with the remaining sauce (heated if desired).
