Meatball Stuffed Pita Pockets

Ingredients
  

  • 1 pita - halved and split open
  • 3 - 4 tbsp HOPE Hummus - divided
  • 2 - 3 oz prepared meatballs - mini or halved if larger size
  • cucumber - sliced or chopped
  • cherry tomatoes - halved
  • lettuce or arugula
  • red onion - thinly sliced
  • 1 - 2 tsp olive oil

Method
 

  1. Spread 2- 3 tablespoons of HOPE Hummus into each of the pita pocket halves.
  2. Fill the pockets with the meatballs, cucumber, lettuce, tomatoes and onions.
  3. Mix the remaining tablespoon of HOPE Hummus with the olive oil and drizzle the mixture over the pita pockets. Enjoy!
