Lemon Pepper Salmon Bites

Ingredients
  

SALMON
  • 1 lb salmon - cut into bite-size cubes
  • 1 tbsp olive oil
  • 2 tbsp Dash Lemon Pepper Seasoning Blend
LEMON PEPPER VINAIGRETTE
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic - minced
  • 1 1/2 tsp dijon mustard
  • 1 tsp honey
  • 1/3 cup olive oil
  • 1/2 tbsp Dash Lemon Pepper Seasoning Blend

Method
 

  1. Place the cubed salmon in a bowl. Add the oil and Dash Lemon Pepper Seasoning Blend and toss to coat.
  2. Place on a sheet pan and broil for 6 - 9 minutes, until cooked to your preferred temperature.
LEMON PEPPER VINAIGRETTE
  1. Add all ingredients to a bowl and whisk until the dressing is emulsified. You can also place in a jar, add the lid and shake until emulsified.
  2. Serve the cooked salmon over rice, pasta or salad greens. Serve with cucumbers, cherry tomatoes, sliced avocado and drizzle with the prepared dressing.
