Leftover Turkey & Rice Soup

Servings: 4

Ingredients
  

  • 4 tbsp butter
  • 1 small onion - chopped
  • 4 carrots - sliced
  • 2 celery ribs - chopped
  • 2 cloves garlic - chopped
  • 1/4 cup flour
  • 5 cups chicken broth
  • 1 packet Lipton Recipe Secrets Onion Soup Mix
  • 1 1/2 – 2 cups turkey - cubed
  • 1 tbsp fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups cooked rice

Method
 

  1. Melt butter in a large pot.
  2. Add the onion, carrots and celery and cook on medium high for 3 – 5 minutes until the onions are soft and translucent.
  3. Add the garlic and cook another minute until fragrant.
  4. Stir in the flour and cook for one minute, stirring constantly.
  5. Add the Lipton Recipe Secrets Onion Soup Mix, chicken broth, turkey, thyme, salt & pepper and bring to a boil.
  6. Reduce heat and cook for 10 minutes.
  7. Stir in the cooked rice. Adjust seasoning as needed. Serve and enjoy!
