Hummus Crusted Salmon

Ingredients
  

  • 4 5-oz salmon fillets
  • 1 cup HOPE Hummus - any variety you love
  • 1/2 cup panko breadcrumbs
  • 1/4 cup parmesan cheese - shredded
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 425ยบ F. Line a sheet pan with parchment paper. Place the salmon fillets on the prepared pan.
  2. In a small bowl, add the breadcrumbs, parmesan, salt, pepper and olive oil. Mix to combine.
  3. Spread 2 tablespoons of hummus on top of each fillet the spoon the breadcrumb mixture over the hummus, gently pressing into the hummus.
  4. Bake the salmon for 10 - 15 minutes, until the salmon is cooked to medium and the breadcrumb topping is golden brown. Serve and enjoy!
