To make that happen, here are a few tips to help create a stress-free morning:

  • Sunday Prep: Spending just 20 minutes on a Sunday evening prepping a batch of breakfast staples can save your sanity during the week.
  • Make it an Activity: Get the kids involved! Even the little ones can help stir, mash, or decorate. When they help make it, they’re much more excited to eat it.
  • A Stocked Power Pantry: A well-stocked pantry is my secret weapon. Having the basics on hand means I can whip up something nutritious on the fly without a last-minute grocery run.

One of my absolute favorite, make-ahead essentials is my recipe for Oatmeal Raisin Breakfast Cookies. Don’t let the name fool you—these aren’t your average dessert. They are packed with wholesome ingredients and are perfectly portable. They are naturally filling and the ideal solution for an on-the-go breakfast, a mid-morning energy boost, or even a healthier after-school treat.

Oatmeal Raisin Breakfast Cookies

Ingredients
  

  • 1/2 cup McCann's Irish Quick & Easy Steel Cut Irish Oats
  • 1 cup all purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp kosher salt
  • 1 1/2 tsp Spice Islands Ground Cinnamon
  • 1/2 cup softened unsalted butter
  • 1/2 cup packed light brown sugar
  • 1/4 cup Spring Tree Maple Syrup
  • 1 tsp Spice Islands Pure Vanilla Extract
  • 1/2 cup raisins

Method
 

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine McCann's Irish Quick & Easy Steel Cut Irish Oats, flour, baking soda, salt and Spice Islands Ground Cinnamon. Whisk to combine. Set aside
  3. Beat butter, Spring Tree Maple Syrup and vanilla extract until creamed.
  4. Gradually mix the dry ingredients into the creamed butter mixture.
  5. Fold in the raisins.
  6. Using a 1"-scoop, drop the dough onto the parchment lined baking sheet, leaving about 1 inches between each cookie. Gently press to flatten the cookie to approximately 1/2" thickness.
  7. Bake for 12 - 15 minutes, until golden brown. Transfer to a wire sheet to cool.

McCann’s Irish Oatmeal: This is a true breakfast workhorse. We love it as a warm, hearty bowl of oatmeal, of course, but it’s also fantastic in pancakes, waffles, and these breakfast cookies. The coarse texture and nutty flavor are unbeatable.

Cream of Wheat: Sometimes you just need something warm and creamy. Cream of Wheat is a classic for a reason. It’s incredibly fast to make (perfect for rushed mornings!), and I love that you can customize it with anything… sweet or savory!

Spring Tree Syrup: My rule for maple syrup… it has to be the real deal. Spring Tree Pure Maple Syrup has that authentic, complex sweetness that just elevates everything from pancakes to my breakfast cookie dough. I always have a bottle on hand.

Spice Islands Spices: A little bit of spice goes a long way. I’ve found that the quality of Spice Islands spices makes a noticeable difference in the flavor of all my favorite recipes.
