Sheet Pan Quesadillas with Amish Country Colby

Ingredients
  

  • 8 oc Amish Country Colby shredded
  • 8 medium flour tortillas
  • 1 lb cooked protein shredded chicken, seasoned beef, or black beans
  • 1 bell pepper and 1 small onion thinly sliced and sautéed
  • 1/4 cup melted butter
  • To Serve: Fresh cilantro lime wedges, and your favorite salsa

Method
 

  1. Preheat your oven to 425°F. Lightly brush a large rimmed baking sheet (12"x17") with a bit of the melted butter.
  2. Arrange tortillas on the pan and then layer your protein and sautéed veggies evenly over half of each tortilla. Top with a generous layer of freshly shredded Amish Country Colby. Fold each tortilla to contain the filling.
  3. Brush the top with the remaining melted butter. Place a second baking sheet on top to press it down (this is the secret to that restaurant-style crisp!).
  4. Bake for 10 - 12 minutes. Remove the top sheet for the final 5 minutes if you want an extra golden finish.
  5. Serve with your favorite toppings including fresh cilantro, lime wedges, and your favorite salsa
