Preheat your oven to 425°F. Lightly brush a large rimmed baking sheet (12"x17") with a bit of the melted butter.
Arrange tortillas on the pan and then layer your protein and sautéed veggies evenly over half of each tortilla. Top with a generous layer of freshly shredded Amish Country Colby. Fold each tortilla to contain the filling.
Brush the top with the remaining melted butter. Place a second baking sheet on top to press it down (this is the secret to that restaurant-style crisp!).
Bake for 10 - 12 minutes. Remove the top sheet for the final 5 minutes if you want an extra golden finish.
Serve with your favorite toppings including fresh cilantro, lime wedges, and your favorite salsa
