If you’ve been looking to elevate your home cooking with truly authentic ingredients, I have some exciting news to help you on your next grocery run. La Chona, a brand deeply rooted in Mexican dairy tradition, has officially arrived at Publix!

For those who haven’t tried it yet, La Chona is all about capturing the flavor of Mexico. They specialize in the kind of traditional cheeses that make Mexican street food and home-cooked meals so unforgettable. Whether you’re hosting a taco night or just want to upgrade your weekday sandwiches, these new additions to the Publix dairy aisle are total game-changers.

Publix is now carrying two of La Chona’s most versatile stars:

La Chona Panela: Often called “basket cheese” because  it’s molded in baskets—this is a fresh, mild white cheese. It can be used as table cheese or in fresh applications like salads, or baked and used as ingredient. It has a unique ability to be grilled or pan-fried without completely melting away, making it a fantastic protein substitute or a creamy garnish for enchiladas and sopes.

La Chona Quesadilla Mexican Style Melting Cheese: This is the secret to that “ooey-gooey” stretch we all crave. Inspired by the cheeses of Chihuahua, Mexico, it’s buttery, rich, and melts like a dream. Besides quesadillas, use it as the base for Mexican pizza, a grilled cheese sandwich, or my personal favorite—flatbreads.

To celebrate La Chona’s arrival at Publix, I wanted to share a recipe that highlights the incredible melt of their Quesadilla cheese. This Jalapeño Popper Flatbread is the ultimate crowd-pleaser. It’s creamy, slightly spicy, and incredibly cheesy.

  3. Arrange your jalapeño slices and crumbled bacon over the cheese.
  4. Place the flatbreads directly on the oven rack (or a baking sheet for a softer crust) and bake for 10–12 minutes, or until the La Chona cheese is bubbly and golden brown.
