One of my absolute favorite ways to warm up on a fall night is with a hearty chili over a fluffy bed of perfectly cooked rice. And when it comes to chili, my Chili Con Carne recipe is a definite crowd-pleaser. It’s packed with flavor and incredibly easy to whip up on a busy weeknight.
A steaming bowl of savory chili, brimming with hearty chunks of beef, robust spices, and a hint of smoky goodness, all piled high over a mountain of light and fluffy Success Rice… it’s a match made in heaven! Comforting, filling, and utterly delicious, this is my idea of the ultimate meal. The rice soaks up all those incredible chili flavors, making every bite a delightful experience.
Ready to dig in? Here’s my go-to Chili Con Carne recipe, perfect for serving over Success Rice.

Method
- Heat oil in a large saucepan over medium heat. Add green pepper and onion; cook and stir until softened. Stir in ground beef and cook until browned.
- Add garlic and cook an additional minute, until fragrant.
- Stir in chopped tomatoes, beef broth, kidney beans and season with parsley, basil, chili powder, cumin, paprika, cayenne pepper, oregano, salt and pepper. Bring to a boil.
- Reduce heat to low, cover, and let simmer for at least 30 minutes (the longer it simmers, the more the flavors will meld!)
- While the chili simmers, prepare your Success Rice according to package directions. It's so quick and easy – perfect for a last-minute addition!
- Ladle a generous portion of the hot chili over a bed of fluffy Success Rice.
