Ultimate Weeknight Chili Con Carne

Ingredients
  

  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 1 small bell pepper chopped
  • 1 pound ground beef
  • 2 cloves garlic minced
  • 28 ounce can fire roasted crushed tomatoes
  • 1 cup beef broth
  • 15 ounce can kidney beans drained and rinsed
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 2 teaspoons chili powder
  • 2 tsp cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper
  • ½ teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Cooked Success® White Rice or Brown Rice for serving
  • Optional toppings: shredded cheddar cheese sour cream, sliced green onions, cilantro

Method
 

  1. Heat oil in a large saucepan over medium heat. Add green pepper and onion; cook and stir until softened. Stir in ground beef and cook until browned.
  2. Add garlic and cook an additional minute, until fragrant.
  3. Stir in chopped tomatoes, beef broth, kidney beans and season with parsley, basil, chili powder, cumin, paprika, cayenne pepper, oregano, salt and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and let simmer for at least 30 minutes (the longer it simmers, the more the flavors will meld!)
  5. While the chili simmers, prepare your Success Rice according to package directions. It's so quick and easy – perfect for a last-minute addition!
  6. Ladle a generous portion of the hot chili over a bed of fluffy Success Rice.
  7. Top with your favorite garnishes and enjoy!
