This appetizer is the definition of simple elegance. It features a log of creamy, tangy goat cheese rolled in a mix of lightly spiced Fisher Pecans and dried cranberries with the perfect hint of fresh rosemary. Ingredients
Method
- Heat oven to 350°F. Line rimmed baking sheet with aluminum foil.
- In large bowl, add the pecans, rosemary, butter, brown sugar, salt and cayenne pepper. Mix to combine.
- Place nut mixture on baking sheet. Bake 5 to 8 minutes or until fragrant and lightly toasted.
- Allow the mixture to cool then finely chop and mix with the parsley and cranberries.
- Roll your goat cheese in the nut mixture, pressing gently to coat.
- Drizzle with honey and serve with crackers, fruit or toasted baguette.
