Pecan Crusted Harvest Goat Cheese Log

Ingredients
  

  • 1 cup Fisher Chopped Pecans
  • 1 tbsp chopped fresh rosemary
  • 1/2 tbsp melted butter
  • 1 tsp brown sugar, packed
  • 1/2 tsp kosher salt
  • 1/4 tsp cayenne pepper
  • 8 oz goat cheese log
  • 1/4 cup dried cranberries, chopped finely
  • 2 tbsp parsley, chopped
  • Honey, for serving

Method
 

  1. Heat oven to 350°F. Line rimmed baking sheet with aluminum foil.
  2. In large bowl, add the pecans, rosemary, butter, brown sugar, salt and cayenne pepper. Mix to combine.
  3. Place nut mixture on baking sheet. Bake 5 to 8 minutes or until fragrant and lightly toasted.
  4. Allow the mixture to cool then finely chop and mix with the parsley and cranberries.
  5. Roll your goat cheese in the nut mixture, pressing gently to coat.
  6. Drizzle with honey and serve with crackers, fruit or toasted baguette.
