It feels like every time I blink, my boys get bigger and bigger. It really does feel like it was only yesterday that they were toddlers and now they are both teenagers!

My boys used to want to hang out with me every minute of the day. I can remember a time when I couldn’t even go to the bathroom by myself. But now, the only time I see them is when they are hungry or when they want/need something. So I make a point to plan as much family time as possible.

One of the fastest ways to get my guys together is by bringing out a tasty dessert. They’ll stop whatever they are doing and rush to the table when they hear that dessert is being served. At my house, Breyers Ice Cream is something that will have EVERYONE running to the table.

I just grab some bowls, a scoop and a couple of tubs of Breyers Ice Cream. It’s the perfect way to get everyone to gather around the table so we can spend time catching up on the day.

And for an extra special treat, I take a few minutes and use some Breyers Ice Cream to make a family favorite – my Breyers Cookie Overload Ice Cream Cake!

You already know that Breyers Ice Cream tastes amazing. But, when you pair that tasty ice cream with cake, cookie dough, sandwich cookies and whipped topping, you have a treat that just can’t be beat. It really only takes a couple of minutes to prep the cake. Then you park it in the freezer for a few hours to set up. I’ll make it in the morning and it will be ready to cut after dinner.

Breyers Cookie Overload Ice Cream Cake

Serves: 10 – 12
Ingredients
  • approximately 1 quart of Breyers Cookies & Cream Ice Cream, softened
  • 2 layers of cake that have been prepared and cooled (8″ layers of any flavor)
  • approximately 2 cups whipped topping, divided
  • approximately 6 chocolate sandwich cookies, crushed (additional for garnish if desired)
  • 2 oz edible chocolate chip cookie dough (additional for garnish if desired)
Instructions
  1. Line a large 8″ round bowl, casserole dish or pot with foil…allowing about an inch of overhang (to assist with easy removal of the cake). The container should have a depth of at least 6 inches.
  2. Cut each cake layer in half horizontally to create two equal layers. You will end up with 4 thin cake layers..but you will only use THREE.
  3. Place one of the cut layers into the bottom of the bowl.
  4. Evenly spread approximately 2 cups of the softened ice cream over the cake layer.
  5. Spread about 1/2 cup of whipped topping over the ice cream layer.
  6. Sprinkle the crushed sandwich cookie over the whipped topping.
  7. Add half of the cookie dough by dropping by 1/2 teaspoon chunks into the bowl with the cookie layer.
  8. Top with another layer of cake and repeat the layers: remaining ice cream followed by 1/2 cup whipped topping then the remaining sandwich cookies followed by the remaining cookie dough.
  9. Add the 3rd cake layer and press lightly.
  10. Place the bowl into the freezer for 6 hours to set.
  11. For easy removal, dip the bowl in hot water for 5 seconds then pull the cake out by the overhanging foil. (Do NOT submerge or allow the water to spill over into the cake)
  12. Before serving, spread the final cup of whipped topping over the cake and decorate with cookie dough and/or chocolate sandwich cookies if desired.
  13. Cut and serve.
Notes
Tip to make cutting the cake a bit easier: Dip your knife in hot water before cutting.
