Method
- In a medium sized heavy bottom pot combine all the ingredients and bring to a boil over medium high heat. Simmer for 20 minutes until rich and thick. Remove from heat.
- Preheat the oven to 400º F. Spray a baking sheet with cooking spray and set aside.
- Place the meatball ingredients in a medium bowl and mix until everything is incorporated. Roll the mixture into 1 1/2-inch balls and place on the prepared pan.
- Bake for 20-25 minutes or until the internal temperature of the meatballs reaches 165º.
- Toss the meatballs in the prepared BBQ sauce.
- Place quinoa in a bowl and add the meatballs, serving with extra BBQ sauce. Top with shredded carrots, sliced cucumbers, peppers, edamame and any other veggies you love.
