Blackberry Chipotle BBQ Turkey Meatball Bowls

Ingredients
  

Blackberry Chipotle BBQ Sauce
  • 1 Tbsp shallot - chopped
  • 1 clove garlic - chopped
  • 1 Tbsp chipotle chilies in adobo - seeds removed and chopped
  • 1/2 cup Polaner Sugar Free Seedless Blackberry Preserves
  • 3 tbsp ketchup
  • 2 Tbsp balsamic vinegar
Meatballs
  • 1 pound ground turkey
  • 1 cup Italian breadcrumbs
  • 3 cloves garlic minced
  • 2 large eggs
  • 1/4 cup milk
  • 1 1/2 tbsp Dash Onion & Herb Seasoning
Bowl Additions
  • Cooked quinoa, shredded carrot, sliced cucumbers, sliced peppers, edamame and any additional veggies you love.

Method
 

Blackberry Chipotle BBQ Sauce
  1. In a medium sized heavy bottom pot combine all the ingredients and bring to a boil over medium high heat. Simmer for 20 minutes until rich and thick. Remove from heat.
Turkey Meatballs
  1. Preheat the oven to 400º F. Spray a baking sheet with cooking spray and set aside.
  2. Place the meatball ingredients in a medium bowl and mix until everything is incorporated. Roll the mixture into 1 1/2-inch balls and place on the prepared pan.
  3. Bake for 20-25 minutes or until the internal temperature of the meatballs reaches 165º.
  4. Toss the meatballs in the prepared BBQ sauce.
Bowls
  1. Place quinoa in a bowl and add the meatballs, serving with extra BBQ sauce. Top with shredded carrots, sliced cucumbers, peppers, edamame and any other veggies you love.
