Ingredients
Method
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, 1/2 cup of powdered sugar, and vanilla extract until light and fluffy.
- Mix in the salt and flour until just combined. The mixture may look crumbly.
- Gently fold in the Fisher Pecans until they are evenly distributed throughout the dough.
- Roll the dough into 1-inch balls and place them about 1 inch apart on the prepared baking sheet.
- Bake for 12–15 minutes, or until the bottoms are lightly golden. The tops should remain pale.
- Let the cookies cool on the baking sheet for just 5 minutes—they should still be warm to the touch. Place the remaining powdered sugar in a shallow dish. Roll each warm cookie in the powdered sugar until completely coated. The residual heat helps the sugar stick.
- Transfer the powdered-sugar-coated cookies to a wire rack to cool completely. Once cool, roll them a second time in the powdered sugar to achieve that beautiful, snowy finish.
