Fisher Pecan Snowball Cookies

Ingredients
  

  • 1 cup 2 sticks unsalted butter, softened
  • 1/2 cup powdered sugar + 1 cup for coating
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 1/4 cups all-purpose flour
  • 1 cup Fisher Chopped Pecans - finely chopped

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, 1/2 cup of powdered sugar, and vanilla extract until light and fluffy.
  3. Mix in the salt and flour until just combined. The mixture may look crumbly.
  4. Gently fold in the Fisher Pecans until they are evenly distributed throughout the dough.
  5. Roll the dough into 1-inch balls and place them about 1 inch apart on the prepared baking sheet.
  6. Bake for 12–15 minutes, or until the bottoms are lightly golden. The tops should remain pale.
  7. Let the cookies cool on the baking sheet for just 5 minutes—they should still be warm to the touch. Place the remaining powdered sugar in a shallow dish. Roll each warm cookie in the powdered sugar until completely coated. The residual heat helps the sugar stick.
  8. Transfer the powdered-sugar-coated cookies to a wire rack to cool completely. Once cool, roll them a second time in the powdered sugar to achieve that beautiful, snowy finish.
